2007 Rutherford Cabernet Sauvignon
"A tremendous effort, dense and chewy, robust and concentrated, with a rich, focused core of blackberry, currant, cedar, herb, and mineral. Full-bodied, gaining depth and persistence." - 94 points, Wine Spectator
The 2007 vintage could prove to be a vintage of the decade. The growing season began with an early winter with below average rainfall, followed by a dry spring leading into a relatively long, cool summer. The long and even growing season provided a lengthy maturation period for the fruit. Hand-harvested in the cool early morning, the estate fruit was sorted in the vineyard before a second hand-sorting at the winery. Individual lots from special vineyard blocks were fermented
and aged separately to allow the broadest range of flavors at blending. All lots received extended maceration with pump overs three times daily and aged 20 months in 90% new tight grain French oak.
