Balsamico Tradizionale 13-Year Aged
Each year we harvest the grapes from our Rutherford vineyards and cook the unfermented juice - the musto - over an open flame. The concentrated vinegar is then rotated from one increasingly smaller wooden cask to the next. In the coolness of our acetaia, the balsamico slowly ages and continues to grow more deliciously complex in flavor throughout the years. Only 195 bottles available.
